Lacking Lettuce


Breakfast today was persimmon oatmeal, with a spoonful of almond butter and sprinkles of coconut. I find that I need a bit more oatmeal if I don’t add a piece of fruit to it.

I love oatmeal. I have it for breakfast at least 3 days a week. But I always try to change it up so I don’t get bored. I find that oatmeal  keeps me full well into lunch even after a long run. It has a ton of fiber and some protein so it’s really nutritious, but most of all, I think it’s delicious. I usually make a huge batch of it in the beginning of the week, put it in an air tight container and into the fridge it goes. I re-heat a portion of it in the morning and spruce it up with whatever I feel like having. The batch usually lasts me about 3 days. I know what you’re thinking, “gross, you keep it in the fridge for three days?”  Yup, it actually keeps extremely well.  If you make a batch in advance, breakfast is ready in no time, and it’s super good too.

Ok, now that i’m done with my oatmeal spiel, here is my lunch. It was dissapointing, and it looks kind of sad in the photo. Really sad, actually.

I had a lunch date all planned out. I was going to try a Romanian cafe with a friend but I had a last minute work meeting, so I had to cancel :(  Because I didn’t pack anything with me, I had to go to one of the closest places to grab something quick. Could be a problem when you’re vegan.

I asked for a salad version of their eggplant sandwich, but instead, I got two GIANT pieces of lettuce with some eggplant on top. The eggplant and roasted tomatoes were cooked perfectly, but two peices of lettuce? How is that a salad?

For dinner, I had my work holiday potluck to attend. My friend, Bridget, who is an amazing roller derby skater, brought one of my favorite dishes – a spelt berry salad with cranberries. So, here is my plate filled with the spelt salad, brussels sprouts, beet arugala salad, sweet potatoes with black beans. I had  a glass (or two) of wine to go with it.

My plate looks quite modest, but I definitely came back for seconds. My favorite part of the potluck was  the white elephant gift exchange. I scored myself the most adorable owl beanie. There is no doubt that I will be wearing it ASAP. For some reason, I’m totally into things with owls on them. Owl things and red things. I have no idea why.

Throughout the process of posting all my meals this week, I’m learning that I have to bring my Eric’s camera with me when I go to places. Hence, no photo of the beanie. I promise I will show it to you later. It’s too cute not to share.
