Day 2 of sharing my meals. I’m getting the hang of this!
I got in the habit of eating breakfast at home before going to work. I manage to squeeze it in after my morning workout and after I get ready for work. I like it because it gives me a few minutes of peace and quite before my day takes off. Work will start getting really busy again soon, so I will be packing up my oatmeal and eating it over my keyboard in no time. Not ideal.
I went a little crazy this morning and got a pot dirty before work! Not to worry though, it took me about 5 minutes to make this. This delicious creation is Asheley’s Oatterific Banana Scramble from her blog, Edible Perspective . Her breakfast recipes looked so fantastic, so I just had to give it a try.
It was so yummy. Banana mashed and cooked with crunchy almond butter, oats, flaxmeal, and vanilla. All the things I would normally have in my oatmeal (not the vanilla), but this version is warm an gooey on the inside. What’s not to love?
Although it looks like a pancake, it has a totally different texture. Truth be told I was starving by 11 am. I needed more oats, I think.
We had a ton of roasted pumpkin leftovers from yesterday’s pumpkin lasagna, so that was lunch. Roasted pumpkin sitting on top of pea hummus and spinach with rye bread Eric bought. Salad on the side. Butter lettuce and broccoli, topped with cashews and a fig vinaigrette dressing from yesterday. Leftovers galore!
Dinner was a quick one today. Stir fry veggies and kale sitting on top of quinoa cooked with lemon juice, thyme, and pumpkin (what else?). Took me about 10 minutes to make and about 5 minutes to eat. I was starving!
