Fall is definitely my favorite season. I love the cool, crisp mornings, especially for going on walks and runs. It rained last night, so the morning was especially pleasant. I had a nice and easy run since I am unbelievably sore from my pilates equipment circuit class. I spent more time admiring the leaves than anything else. The trees in my neighborhood are so beautiful this time of the year!
After such a great run, I was in the mood for banana and PUMPKIN pancakes (as you can see, I’m still in a pumpkin mood). The banana pumpkin pancakes were combination of regular flour, oats, pureed banana and pumpkin, and chia seeds. They were topped with cinnamon and nutmeg caramelized bananas sprinkled with roasted pecans.
Nothing like pancake Saturday after a run. I feel energized and ready to go. Happy Saturday, everyone!
